摘 要：甘草被全球多个国家和地区列为药食同源物品，其提取物被作为良好的甜味剂、调味剂、食品抗氧化剂、乳化剂等应用于糖果、果冻、饮料、酱油和蛋糕等多种食品。本文讨论和总结了甘草及其制品在不同国家和地区食品行业中的应用。

Application of Licorice Products in Food

Abstract： Liquorice has been listed as food and medicine homologous products in many countries and regions of the world， and its extract has been used as a good sweetener， flavoring agent， food antioxidant， emulsifier and so on. It is used in candy， jelly， beverages， soy sauce， cakes and other food. This paper discusses and summarizes the application of licorice and its products in food industry of different countries and regions.
