不同条件下青享竹叶青酒的稳定性研究

摘 要:本文采用色度与浊度的联合跟踪检测方法,研究了青享竹叶青酒在不同条件下色度与浊度的变化规律,为研发类似酒提供参考依据。结果显示,在3个不同保存条件下,青享竹叶青的色度a值上升,色度b值下降,色度L值上升,浊度值上升。

Study on Stability of Qingxiang Zhuyeqing Liquor Under Different Conditions

Abstract: In this paper, the joint tracking detection method of chromaticity and turbidity is used to study the changing law of chromaticity and turbidity of Qingxiang Zhuyeqing Liquor under different conditions, so as to provide a reference for the development of similar wines. The results showed that under three different storage conditions, the chromaticity a value of Qingxiang Zhuyeqing Liquor increased, the chromaticity b value decreased, the chromaticity L value increased, and the turbidity value increased.

本文主要研究的材料是山西杏花村汾酒厂股份有限公司的青享竹叶青酒,就其酒体而言,基酒为清香型白酒,在此基础上搭配共计12味药材,外加低聚果糖共同酿制而成。(剩余3081字)
