Abstract： Heavy metal polution is one of the main factors threatening food safety，and it may pose serious health risks whenentering the humanbody through the food chain.Itis crucial to establish effcientandaccurate heavy metal detection technology to ensure fod safety.This article systematically reviews the main methods for detecting heavy metals in food，including atomic absorption spectroscopy， inductively coupled plasma mass spectrometry， graphite metal spectroscopy，etc.It also explores the development trendsof combined detection technologies and emerging detection technologies，aiming to provide technical references for food safety monitoring， promote innovation and optimization of heavy metal detection technologies，and beter safeguard public health.

食品中重金属污染的来源主要包括动植物在生长过程中通过土壤、水体等环境介质对重金属的自然富集作用；由于重金属元素具有生物不可降解性和沿食物链逐级放大的累积特性，在植物和动物中累积的一部分重金属会通过可食用部分传递给人类。（剩余4786字）
