Abstract： Xylitol， as a natural and efficient sweetener， has broad application prospects in food processing due to its unique physicochemical properties and physiological functions. Based on this， this article introduces the physicochemical properties of xylitol， elaborates on the preparation methods of xylitol， and focuses on exploring the application of xylitol as a functional sweetener in food processing. Intended to provide theoretical basis for the application and development of functional sweeteners in the food industry.
