摘 要:随着人们对食品安全关注的日益增加,电位滴定法因具有操作简单、特异性强、易于实现自动化等优点而被广泛用于食品分析。本文简述了电位滴定法的工作原理、仪器构成,论述了其在食品中碘、二氧化硫残留量、过氧化值、酸价、维生素C以及脂肪酸值等检测中的应用。

Application of Potentiometric Titration in Food Safety Detection

Abstract: With the increasing attention to food safety, potentiometric titration is widely used in food analysis because of its advantages of simple operation, strong specificity and easy automation. This paper briefly introduces the working principle and instrument composition of potentiometric titration, and discusses its application in the detection of iodine, sulfur dioxide residues, peroxide value, acid value, vitamin C, fatty acid value, etc. in food.
