浅谈高职院校食堂管理

——以湄洲湾职业技术学院为例

摘 要:高职院校的食堂聚集性强,人流量大,涵盖了各种风味小吃,食品安全隐患大,亟需制定一套行之有效的管理体系。本文从制度管理、人员管理、食材管控、设施设备管理、就餐环境管理等全面分析高职院校食堂存在的问题,并提出了一系列可行性的管理措施。

Abstract: Canteen in higher vocational colleges has strong aggregation and large flow of people. There has each kind of flavor snack. It is urgent to develop an effective management system because of the serious food security hidden danger. This article comprehensive analysis the problem of system management,food material control, facilities and equipment management, dining environment in higher vocational colleges, and puts forward a series of feasible management measures.
