食用菌多糖生物活性及提取工艺的研究现状

摘 要：食用菌多糖具有多种生物活性，已被广泛应用于食品保健和临床药物治疗等领域。不同种类的食用菌多糖生物活性和提取工艺方法不同，其在保健或临床治疗方面所起的作用也不同。本文对食用菌多糖生物活性的主要功能及提取工艺方法的优缺点进行总结，旨在为后续相关研究提供理论参考。

Research Status of Bioactivity and Extraction Process of Edible Fungus Polysaccharides

Abstract： Edible fungus polysaccharides have a variety of biological activities and have been widely used in food health care and clinical drug treatment. The biological activities and extraction methods of polysaccharides from different kinds of edible fungi are different， resulting in their different roles in health care and clinical treatment. Therefore， this paper summarized the main functions of polysaccharides bioactivity and the advantages and disadvantages of extraction methods in order to provide theoretical reference for subsequent related research.
