A Preliminary Study on the Oil-Extracting Technology in the Dunhuang Region during the Tang and Five Dynasties Period

Abstract:DuringtheTangandFiveDynastiesperiod,vegetableoilplayedanincreasinglyimportantroleinbothprivate andsociallife,whichledtothedevelopmentandpopularizationofoil-extractingtechnology.Therearemanyrecords fromthe Dunhuangregionrelatedtothelocaloil-pressingworkshops,knownasyouliang油梁inDunhuangdocuments,thecontentsof which provideacomprehensivepictureofteoil-pressngidustryatthetime.Basedonasystematicanalysisofthesehistorical manuscripts,thispapercondutsatargetedanalysisof tevariosinstruments,materials,andoilseedsusedinoil-preingorkshops,and describesthestepsof theprocessofoil-making,suchasfrying,crushing,steamingandwrapping.Finalythestudy calculates theoilextractionratefromjuteplantsaccording tothequantitiesrecorded indierent documents,inanefforttoexplore the standard quantity that the oil processing industry was capable of producing at the time.
