杨桃功能性成分及产品开发的研究进展
摘 要:杨桃营养极其丰富,富含矿物质、维生素、多糖和多酚类等物质,具有重要的开发利用价值和广阔的市场前景。本文总结了杨桃主要功能性成分和杨桃饮料、果酒、果脯等产品开发的研究进展,以期为杨桃精深加工的研究提供一定的参考价值。

Research Progress on Functional Components and Product Development of Averrhoa carambola

Abstract: Averrhoa carambola is extremely nutritious, rich in minerals, vitamins, polysaccharides, phenols and other substances, with important development and utilization value and broad market prospects. This article summarizes the research progress on the main functional components of Averrhoa carambola and the development of Averrhoa carambola beverages, fruit wines, preserved fruits and other products, in order to provide certain reference value for the research of deep processing of Averrhoa carambola.
