不同贮藏温度对刺梨原汁中维生素C含量的影响

摘 要:利用2,6-二氯靛酚滴定法测定刺梨原汁中的维生素C含量,分析不同贮藏温度对刺梨原汁的维生素C含量的影响。结果表明,刺梨原汁的维生素C含量受温度影响较大,在冷冻条件下其维生素C含量相对稳定,但随着贮藏时间的增加,维生素C含量明显下降,且温度越高,下降越多。

The Effects of Vitamin C in Rose roxburghii Trat Juice in Different Storage Temperature

Abstract: The purpose of this study was designed to determine the content of vitamin C in Rose roxburghii Tratt juice by the methods of 2,6-dichloro-indophenol titration, and to evaluate the effects of different storage temperatures on the content of vitamin C in Rose roxburghii Tratt juice. The results clearly showed that the content of vitamin C in Rose roxburghii Tratt juice was greatly affected by temperature, and the sampled levels were relatively stable under freezing conditions. However, the content showed a significant downward trend as the storage time increased, there would be a higher temperature and hence lower content.
