Effect of optimization of preparation conditions of Hanseniaspora uvarum aroma-enhancing medium oncigartobacco leaves

Abstract:ThepotentialofHanseniasporauwuarumaroma-enhancing mediumpreparedby Hanseniasporauarumandtobacco flower budstoimprovethequalityofsolid-statefermentedcigarleavesunderoptimizedpreparationconditionswasexplored.Aftersinglefactoroptimizationofcarbonsoure(glucose),nitrogensource(isoleucine)concentrationandinoculationamountduringthpreparation ofaroma-enhancing medium,itwasfoundthatthetotalaromareachedthehighestlevelwhenthe glucoseconcentrationwas 10% of the aroma medium system,the isoleucine concentration was 0.8% ,and the inoculation amount was 2.8% of the weight of cigar tobacco leaves.Afteroptimizing theabove threeconditionsbyresponsesurface methodology,thetotalamountofaromacouldreach 1098.70μg/g Atthis time,glucose in the fermentation broth consumed 54.45g/L ,isoleucine decreased by 0.63g/L ,the number of viable bacteria increasedbyO.78×10CFU/mL,andthecontentofacidsandaldehydesinthevolatilearomasubstancesofthefermentationbrothincreased.Thisresearchcould providenovel strategiesandtheoreticalsupportforthedevelopmentofaroma-enhancing mediumforcigars in China.

茄衣在雪茄烟的形成中起着至关重要的作用,通常情况下,茄衣在发酵后叶片会变软,弹性增大,从而更贴切茄套与茄芯,不仅如此,色泽、口感与香气也会得到显著的提升,香气会更加浓郁,与茄芯的香气相互融合,从而展现雪茄烟独特的魅力[1-3]。(剩余9070字)
