Analysis of Quality and Metabolic Differences Between Under-forest and Open-air Tea in Rizhao

Abstract: Inorder to explore thequalityand metabolic diferences between under-forest tea and open-air tea in Rizhao, this studysystematically compared them in diferent seasons through sensory evaluation and quality biochemical component analysis combined with non-targeted metabolomics technology.The results show that interms of sensory quality,thearomaandtasteof under-forest tea were beter than thoseofopen-airtea,which was characterizedbyfloral and fruity aromaand fresh and sweet taste.There were seasonal differences inthe biochemical components,and the contentsofteapolyphenolsandflavonoids inspringunder-forest tea were high,whilethecontents of teapolyphenols and flavonoids in summer and autumn open-air tea were higher. The cafeinecontent ofopen-air tea was high in spring and summer,but thecaffeine content ofunder-forest tea was higher inautumn.The metabolicanalysis shows that atotal of2740 metabolites were identified in both under-forest and open-air tea,733 ofwhich were differentially expressed. These focused mainly on amino acid and derivative synthesis,as wellas alkaloids,lipid and carbohydrate metabolism, and metabolic pathways such as cofactors and vitamins. Compared with open-air tea,the amino acids and lipid metabolites ofunder-forest tea show adownward trend as a whole.The down-regulated metabolites included ergothioneine, D-(-)-glutamine,ethyl3-oxyacetate,DLarginine,glycosamineandethyl3-oxyacetate.Conversely,thealkaloidandsugar metabolitesofunder-forest tea showan up-regulated trend.Theup-regulated metabolites included L-histidine betaine, rutin and leutaxel glucoside.
