Abstract:Peelcolorisanimportant indexto measuretheappearancequalityoffruit,which iscloselyrelated tofruit qualityandcandirectlyaffectconsumers‘purchaseintentionand marketcompetitivenessoffruit products.Inrecent years,significant progress has beenmade in the researchon thecoloring mechanism of hawthornpelat home and abroad.This paper reviews the pigmentcontentandcompositionofhawthornpelcoloringanditsmain influencingfactors,andsummarizes thelat estresearch resultsofregulation technologyand genetic mechanismon hawthorn,aiming toprovide scientificbasis forquality improvement and genetic breeding of hawthorn fruit and promote the sustainable development of hawthorn industry.
