Abstract：Peelcolorisanimportant indexto measuretheappearancequalityoffruit，which iscloselyrelated tofruit qualityandcandirectlyaffectconsumers‘purchaseintentionand marketcompetitivenessoffruit products.Inrecent years，significant progress has beenmade in the researchon thecoloring mechanism of hawthornpelat home and abroad.This paper reviews the pigmentcontentandcompositionofhawthornpelcoloringanditsmain influencingfactors，andsummarizes thelat estresearch resultsofregulation technologyand genetic mechanismon hawthorn，aiming toprovide scientificbasis forquality improvement and genetic breeding of hawthorn fruit and promote the sustainable development of hawthorn industry.
