Abstract:Thetraditional determinationmethodsoffruitmaturityincludeseedcoatcolor,peelcolor,fruithardness, starchcontent and soluble solids content,butthese methodsareaffected by manyfactors,and the accuracyis limited.As an importantindex tojudgethematurityoffruit,drymatercontentiscloselyrelatedtotheediblequalityandstorageofruit. Thedetection methods of dry matercontent include drying method,specific gravity method,refractivemethodandnon-destructive testing method.Non-destructive testing techniques such as near-infrared spectroscopy have been widely used i the qualitydetectionofvariousfruitsduetotheirast,non-destructiveandeficientcharacteristics.Thecomprehensiveapplication of dry mattercontentandother maturityindicatorscanimprove the accuracyoffruit maturity judgment,which isofgreat sig nificance for improving fruit quality,reducing postharvest lossand promoting the sustainable development offruit industry.
