天然植物花色苷研究进展

摘 要：花色苷是花青素的显色成分，存在于很多植物体内，具有抗氧化活性、抗癌、抗肥胖等作用。本研究概述了花色苷的分布、提取方式、鉴别及定量分析、生物学特性研究进展，并展望了花色苷在食品中的应用。

Abstract： Anthocyanins are the chromogenic components of anthocyanins， which exist in many plants and have antioxidant activity， anti-cancer， anti-obesity and other effects. In this study， the distribution， extraction， identification， quantitative analysis and biological characteristics of anthocyanins were summarized， and the application of anthocyanins in food was prospected.

花青素具有典型的类黄酮结构，主要以植物色素的形式存在，可显现出红色、蓝色和紫色，以糖苷形式广泛分布于有色水果中，特别是浆果，其显色成分为花色苷。（剩余5835字）
