Detection of nutritional and functional components and analysis of nutritional value inCordycepsmilitarisfermented powder

AbstractTo develop functional foods using Cordyceps militaris,this studyemployed five grains as the solid culture medium for Cordyceps militaris.Through a fermentation process,Cordyceps militaris fermented powder rich in cordyceps active componentsand with balanced nutrition was prepared.The contents of functional components (adenosine,ergosterol,manntol)andnutritionalcomponents(protein,aminoacids,crudefat,crude fiber)betweenthis fermented powder and unfermented five-grain powder were compared and analyzed.Meanwhile,indices such as amino acidscore(AAS)and chemical score(CS)were usedto evaluate the nutritional value of proteins.Theresults showed thatafter fermentation,themannitol content inthe five-grainpowderincreased byapproximately 34.60% ,the adenosine content by 86.21% ,and the ergosterol content by 295.43% compared with the unfermented state.In addition, the protein content of Cordyceps militaris fermented powderhas increased by5.47 percentage pointscompared with that in the unfermented state,whilethe contents ofcrudefat and crude fiber have increased slightlywith smallgrowth rates.

Afterfermentation,the biological value(BV)and nutritional index(NI)of the miscelaneous grainpowder have increased by 45.22% and 64.77% respectively compared with those in the unfermented state.Comprehensive evaluationresults indicatedthatthenutritional valueof Cordycepsmilitaris fermented powderwas significantlysuperior tothatof unfermented five-grainpowder,and the protein amino acid balance in the Cordyceps militaris fermented powder was better.It has broad developmentandapplication prospects as well as good economicand social benefits. This studycan providea theoretical reference fortheresearch and developmentof Cordyceps militaris-related foods.
