茉莉花、柚子叶、橘叶提取物对模型反应中PhIP的抑制效果研究

ABSTRACT:Theaimof this study was to investigate theinhibitory effectof jasmineflower,pomelo leaf and orange leaf on 2-amino-1-methyl-6-phenylimidazo[4,5-b]pyridine(PhIP)generated ina chemical model system.The flavonoid extracts of jasmine flower,pomelo leaf andorange leaf with diferentadditive amounts wereadded intoa chemical model system with phenylalanine and creatinine as precursors forthe reaction,and UPLC-MS was used to monitor the changes of thecontentsofprecursors,intermediate phenylglycolaldehydeandtheproduct PhIPinthemodelreaction toexplore the inhibitoryefects.Theresults showed thatthe threeextracts exerted significant inhibitory effects on the generationof PhIP,with 59‰ when orange leaf extract was added at 0.06g , 56.98% when grapefruit leaf extract was added at 0.06g ,and 53.13% when jasmine flower extract was added at 0.08g . It was concluded that jasmine flower,pomelo leaf andorange leaf flavonoid extracts significantly inhibited heterocyclicamine PhIPin the folowing order:orange leaf extract>pomelo leaf extract>jasmine flower extract.
