Metabolomics and Antioxidant Activities of Gongmei and Mudan White Tea

Abstract：Thisstudyistorevealtherelationshipbetwnchemicalconstituentsandbioactivitisofwhitetea.Bothuntargetedand targetedmetabolomicsapproaches were employed tosystematicallanalye thevolatileandnon-volatilechemicalconstituents of two typesof white tea： Gongmei （GM）and Mudan（MD）.Furthermore，the invitroantioxidantactivitiesofGMandMDwereevaluated. TheresultsshowedthatGMcontainedhigherlevelsof totalpolypenolsandmostaminoacids thanMD.Atotalof1963 metabolites wereidentified through untargeted metabolomics，among which119 showed significant diferences between GMandMD.These diferentialmetaboliteseremilyonids（8）penoliccidsdeirvatives ndterpenids.Tagetedd analysis furthervalidated thediferences inkeyflavonoidsbetweenGMandMD.Theinvitroantioxidantassays （DPPH，ABTS， andFRAP）demonstratedstrongantioxidantacitivitiesofbothGMandMD，withGMexhibiting strongerantioxidantactivity.The correlation analysis revealed that specific flavonoids were closely associated with antioxidant activity.
