Metabolomics and Antioxidant Activities of Gongmei and Mudan White Tea

Abstract:Thisstudyistorevealtherelationshipbetwnchemicalconstituentsandbioactivitisofwhitetea.Bothuntargetedand targetedmetabolomicsapproaches were employed tosystematicallanalye thevolatileandnon-volatilechemicalconstituents of two typesof white tea: Gongmei (GM)and Mudan(MD).Furthermore,the invitroantioxidantactivitiesofGMandMDwereevaluated. TheresultsshowedthatGMcontainedhigherlevelsof totalpolypenolsandmostaminoacids thanMD.Atotalof1963 metabolites wereidentified through untargeted metabolomics,among which119 showed significant diferences between GMandMD.These diferentialmetaboliteseremilyonids(8)penoliccidsdeirvatives ndterpenids.Tagetedd analysis furthervalidated thediferences inkeyflavonoidsbetweenGMandMD.Theinvitroantioxidantassays (DPPH,ABTS, andFRAP)demonstratedstrongantioxidantacitivitiesofbothGMandMD,withGMexhibiting strongerantioxidantactivity.The correlation analysis revealed that specific flavonoids were closely associated with antioxidant activity.
