Abstract:Toexplorethepotentialutilizationvalueofwatermelonpeels fromdiferentvarieties,this studydetermnes 26 indexesincluding appearance,nutrientandactive substances contents derived from21types of watermelon pels.Ituses Orthogonal Partial Least Squares-Discriminant Analysis (OPLS-DA)to screenout the key substances that determine the qualitydiferencesof watermelon pels,and employs cluster analysis to classifythe utilization modes of watermelon peels. The results show that there are significant diffrences in the quality of watermelon pees among varieties (p<0.05) . The interspecific coefficient of variation is the highest for quercetin content (78.49%) and the lowest forpH value (2.18%) ).With totalacid,totalsgareducingsugardetaryfiber,totalphenolandmonomericpenolicontentsasrigialvarables,tis study performsOPL-Danalysistosreeout8keyindicators (i..p-coumaricacid,ferulicacid,myricetin,totalpenol, totalacid,totalsugar,educingsugarandsolublesolid).Basedontheseindicators,itconductsclusteranalysis,dividingthe 21 varietiesofwatermelonpeelsinto4categories: ClassI-Al2G34,A21,B13W40,B23W82,with highphenolotentin their peels; Class I-A4065,B21W79,B3,B5G19,B8W7,withhghsugarcontent intheirpeels; ClassIl-,A27, A48G96andsixothers(atotalof9varieties),withhighorganicacidcontentintheirpeels;ClassIV-D14H26,D4H7and GP,which are low in representative key substances but contain more than 50% dietary fiber,making themideal raw materialsfordietaryfiberpreparation.Theresultsof this study provide areference forthe high value and eficient utilization of watermelon peels.
