Abstract:【Objective】By spraying sorbitol with diferent concentrations,the effects of sorbitol on the appearance quality,sugarandacidand nutritional qualityof protected peach fruit were studied,soas toimprove thequalityof protected peach fruitand provide reference for the cultivationand management of protected peach (Prunus persica). 【Method】The peach cultivars‘Chunxue'and‘Hongyu’withstrong growth and goodfruits wereusedas test materials.The peach treeswere sprayed with sorbitol solutions of clean water (control), 80mmol/L , 100mmol/L and 120mmol / Lfrom the fruit expansion stage to the color change stage,and the appearance quality (mass of single fruit,fruit shape indexandhardness),sugarandacid (solublesugar,titratableacid),massratioofsolublesolids,ndnutritionalquality (massratioof totalflavonoids,total phenols,ascorbicacidandanthocyaninspecificabsorbance)ofthe mature fruits were measured andanalyzed.【Result】Sorbitol treatments had litleefect on the fruit shape index,single fruit mass and soluble sugar content of‘Chunxue’and‘Hongyu’peaches,but spraying 100 mmol A sorbitol significantly reduced the hardnessof‘Chunxue'and increasedthecolormassratiooftotalfavonoids,total phenols,ascorbicacid,anthocains in‘Chunxue’and‘Hongyu’peaches.Theresultsofcorelation analysisand principalcomponent analysis showed that soluble solids,single fruit mass and total phenols in‘Chunxue’fruit were positivelycorrelatedwith total flavonoids. Fruit shapeindex was negativelycorrelated withhardness,sugar-acidratioandtitratable acid.Anthocyanins in‘Hongyu fruitwerepositivelycorelatedwithsolublesolids,whilesolublesolidswerenegativelycorrelated withhardness,total flavonoids and soluble sugars. 【Conclusion】 100mmol/L sorbitol treatment significantly increases the mass ratio of total phenols,ascorbic acidand anthocyanin specific absorbance‘Chunxue'and‘Hongyu’peach fruits,thus improving the quality of peach fruits.
