Quality Analysis of Zhangping Oolong Tea Cake Madeby Three New Tea Strains

Abstract: Fresh leaves from threenew tea strains,namely Tangbohu(0206A),Ruiming (O206B),and Zhilong (0325A), were used to produce oolong tea following the processing technique of Zhangping Narcissus Tea Cake, with the tea cultivar Fujian Shuixian as thecontrol (CK).The diferences in sensory and quality components among these three new strains were analyzed to evaluate their processng suitability.Sensory evaluation reveals that theoolong tea cakes made fromthe three strains al gothigheroverallscores than CK,withdistinctcultivararomaandarich,mellow,sweet,and refreshing taste profile.Bichemical analysis shows that the free aminoacid contents of0206A,0206B,and O325Awere higher than thatofCK.The tea polyphenolcontentof O206B was higherthan CK,while O325Aexhibited significantly higher levels of water extract,caffeine,and soluble sugars compared to CK.In terms of catechins,the total simple catechin contentsof0206A,0206B,andO325Awere significantlylower thanthatofCK.The total esterifiedcatechin content in O325A was significantlylower than CK,while those in O206Aand 0206B were significantly higher than CK. Aroma componentanalysis indicates that the contents of alcoholsand aldehydes in O2o6A and O206B were significantly higher than those in CK.Comparativeanalysis reveals that the similarityrates between 0206A,0206B,0325A,and CK were0.9605,0.8580,and0.9812,respectively.Basedon the integrated resultsofsensory evaluation,biochemical composition,and aroma component analysis,the tea samples produced from the three new strains exhibited excelent quality and are all suitable for manufacturing Zhangping oolong tea cake.
