AbstractPlant essential oils are plant-derived secondary metabolites with good biological activities, such as antimicrobial,antioxidant antiseptic preservation, which have great potential for application in the preservation fruits vegetables. Moreover,People pay increasing atention to food safety,which has promoted the development green eficient preservation agents.The study on the types mechanisms plant essential oils has made breakthrough progress.Besides,the research on the application plant essential oils in fruits vegetables preservation is increasing.The types plant essential oils,the antimicrobial mechanisms, the potential applications in fruits vegetables preservation were systematically described in this paper.Inaddition,the article brieflyoutlined the problems in theapplication esential oils in preservation, looked forward to the prospects their application in fruits vegetables preservation.It aimed to provide a basis for the development novel preservatives preservation technologies plant essential oils, to promote the application plant essential oils in fruits vegetables preservation.
