Abstract:Asparagus offcinalis contains abundant nutrients and has high edible and medicinal value.This paper summarized the functional components and biological activities of A .officinalis,and introduced the current situation of A . offcinalis processing technology in China,including fresh food,primary processing, waste utilization,and development of food ingredients.It pointed out the problems existing in China's fresh consumption and processing industry of A .offcinalis,such as rawmaterial surplus and waste,analyzed the comprehensive utilization technology of A .officinalis waste,in order to provide references for the future development of the A . officinalis industry.
