ABSTRACT:Starchis the main component of rice grain and the main energy sourceof people's food.The grain filing process of rice is actually the process of starch biosynthesis andaccumulation.Inthis paper,the keyindexes and physiological mechanismsofricestarch biosynthesis andtheir relationshipwith ricequalityformation werereviewed basedon the aspects of grainfiling characteristics,grain starch structure characteristics,starch synthesis keyenzyme activitiesandrelated gene expression. The research progressof the mechanism of starch synthesis in rice grains was further prospected, inorder to providea theoretical basis forimproving thequalityof starch accumulation and improving rice yieldand quality.
