ABSTRACT: In order to researchtheimpedance responsecharacteristic lawof pork tissue with diferent bioelectrical impedance detection conditions,the experiment was cariedout with pork as the object.Diferent excitation current amplitudeand excitation signal frequency were used for the impedance measurement,and the sizeof the excitation current amplitude as wellas theexcitationsignalfrequency wereselectedto determine theimpedance measurement conditionsof pork andto establish the prediction modeloffat content.The results showed that among the three excitation current amplitudes of 1,3 and 5mA , the stability of the impedance response of the pork tissue obtained by the stronger excitation current was better;in the frequency interval of 0-400kHz , the stability of the impedance response showed a trend of decreasing and then increasing as the frequencyof the excitation signalincreased.When theexcitation currentamplitude was 5mA and the frequency of the excitation signal was 50kHz ,the pork impedance information with better stability can be obtained,and the impedance value and phase angle were significantly correlated with the fat content ( P<0. 01 ). In conclusion,thefatcontentof pork tisses can beaccurately measured using bioelectrical impedance technology,which can be used to predict the fat content of pork and provide technical support for intelligent body composition detection.
