Abstract:ThefruitsofBasellaalbaarerich inpurple-red pigments,whichare notonlycolorfulandsafebutalso exhibit strongantioxidantactivity,showing potentialapplication in the developmentofflavored teas and other food products. Byblending Basellalbafruits withwhitetea,sun-dried greentea,black tea,andOolong tea,fourflavoredteaproducts were developed:Basella white tea,Basellasun-dried green tea,Basellablack tea,and Basella Oolong tea.Theresults showed that these four teas retain the typical flavors oftheir original tea types.High-performance liquid chromatography (HPLC)wasused to determine some characteristic tea components in these four flavored teas.The results showed that the content of caffeine and catechins decreased, while the content of γ amino acids increased in these flavored teas,laying afoundation for the applicationof Basella alba fruits in flavored tea products.
