Abstract: Yelow tea is a unique,lightly fermented tea among the six major teacategories,with itscore processing techniques (sealed yellowing)shaping thequalitycharacteristics and distinctive flavorof"three yellows".Inrecentyears, the yellow tea industry has developedrapidly.Studies have revealed the formation mechanisms of ts distinctive flavor, whichinvolves multiplechemical changessuchas catechins isomerizationand the Maillard reaction.Yellowtea has also benconfirmed toposssshealthbenefits,including hypoglycemicandlipid-lowering effects,antioxidantactivityand gut microbiota regulation.Meanwhile,the standardization and automation of processing techniques have significantly modernized the industryand promoted the developmentof innovative yelow tea-based products.This review systematically summarizes the importantadvances over thepast decade in theflavorchemistry,health functions,and procsing applications ofyellw tea,aiming to provide areference forthe high-quality developmentofthe yellow tea industry.
