Quality Analysis of Dianhong Congou Black Tea Processed from Fresh Leavesof Grafted Wild Tea Trees in Yunnan

Abstract:Toexplore thesuitabilityoffresh leaves from wild tea trees grafted indiferent regions of Yunnan for procesing into Dianhong congou black tea,13 wild tea tree germplasm resources from various regions of Yunnan were selected.After artificial grafting,traditional processing techniques were employed to produce Dianhong Congou black tea,which was then subjected to sensory evaluation and physicochemical analysis.The sensory evaluationresults revealed significant differences in the scores for taste,aroma,and infused leaf among Dianhong Congou black teas produced fromgrafted wild tea tree resourcesofdiferent provenances.In terms of physicochemicalcomponents,the 13 wild Dianhong Congou black tea samples exhibited water extract contents ranging from 38.33% to 50.95% ,freeamino acid contents from 1.52% to 3.12% ,teapolyphenol contents from 12.58% to 20.08% ,caffeine contents from 2.54% to 3.90% ,and soluble sugar contents from 2.58% to 4.75% . This study provides a reference for revealing the quality of wild tea in Yunnan and its resource utilization.
