椰毒假单胞菌酵米面亚种灭活条件研究

摘 要:目的:降低湿米粉中椰毒假单胞菌酵米面亚种污染风险,防止湿米粉米酵菌酸中毒事件发生。方法:采用加热和紫外的方法对椰毒假单胞菌酵米面亚种的灭活条件进行研究。结果:加热和紫外均可以杀灭椰毒假单胞菌酵米面亚种。结论:湿米粉企业可以使用加热或紫外的方法来防止产品被椰毒假单胞菌酵米面亚种污染。

Abstract: Objective: Reduce the pollution risk of contamination of Pseudomonas cocovenenans subsp. farinofermentans in fresh rice vermicelli, prevent poisoning incidents caused by bongkrekic acid from fresh rice vermicelli. Method: Study on inactivation parameters to Pseudomonas cocovenenans subsp. farinofermentans by heat and UV irradiation. Result: Pseudomonas cocovenenans subsp. farinofermentans can be killed completely by heat and UV irradiation. Conclusion: Fresh rice vermicelli enterprises can use both two methods to prevent pollution of Pseudomonas cocovenenans subsp. farinofermentans.
