Abstract:Coffeabelongs totheCoffeagenus,Rubiaceaefamily,andisanimportant tropicaleconomiccrop.Coffee is widelypopulardue toitsunique flavorand biological functions.Cafeineand trigonellineare keycomponents,which comprisethemaifavorofoffe.Teyhavevariousbiologicalactivitiessuchasati-inflmmatoryant-cancer,metabolism regulation,neuroprotectionanddiabetes treatment.Theextractionanddeterminationmethodsofcofeaalkaloids,the syntheticmetabolicpathwaysof majorcompounds,and their biological activitieswere reviewed.Futureresearchdirections wereexplored,includingthediversityofcofeaalkaloidcompounds,extractionanddeterminationmethods,biological activitiesandthedevelopmentofcofeaproducts,whichprovidedatheoreticalreferenceforfurtherresearchoncoffa-related applications.
