Abstract We investigate the properties,thermal stability,and industrial applications of β -mannanase,an endoglucanase that hydrolyzes β-1 , 4 -mannosidic linkages. It is widely used in feed, food processing,textile industries,and biofuels. We first summarize the basic characteristics of β -mannanase,including its distribution in animals, plants,and microorganisms,as well as the optimal reaction conditions and stability of enzymes from different sources. Subsequently,we analyze the structural factors affecting the thermal stability of β -mannanase,such as metal ion-binding domains,carbohydrate-binding domains, flexible regions,and salt bridges,and propose molecular engineering strategies to enhance its stability,which is crucial for its industrial applications. We also discuss the industrial applications of β -mannanase, particularly as a prebiotic in feed,and its potential uses in food processing,detergent,and textile industries, highlighting its multifunctionality and impact on increasing industry efciency and sustainability. Finally,we anticipate future research directions, including the exploration of new enzyme resources,optimization of structural modification strategies,and balancing the thermal stability and catalytic activity of enzymes.
