Abstract
With theacceleration of populationaging in China and the rapid development of the elderly care industry, thereareproblemsinthefieldof elderlydietsuchasnon-standardcooking technology,insuficient elderlyfriendliness,and dificultyin balancing nutritionand safety.Therefore,the group standard“Technical Specification of Dietary Designand Cooking for Elderly Adults”has emerged as the times require.Focusing onthedietaryneedsoftheelderlyaged 65andabove,thisstandard takescooking technologyspecifications asthecore,coveringbasicdesign,elderly-friendlycooking techniques,and dietary treatmentfor theelderly with dysphagia.It clarifies specific requirements for food processing,cooking methods,food texture and shape.Compared with the existing relevant standards,it has significant advantages in the quantification of process parameters,accurate coverage of special groups,coupled design of safety and nutrition,and optimizationof elderly-friendly experience.The implementationof the standard can strengthen the safety guarantee of the elderly's diet, promote service upgrading,and guide the integration and innovation of industrial resources.At the same time,it can be promoted by establishing a hierarchical training system, carrying out pilot demonstrations,and strengthening publicityand guidance.It is of great significance for improving the elderly dietary service system,coping with population aging,and implementing the“Healthy China” strategy.
