Effect of Different Doses of 60C0-γ -Ray Irradiation on the Postharvest Storage of Water Chestnuts

Abstract: The studytook waterchestnuts from Lipu,Guangxi as the research object,with weight loss,hardness, relative conductivity,MDA,SSC,total phenols,flavonoidsand quinone contentsserving as evaluation indicators.The effects of different irradiation doses of 60Co-γ -rays(0,2,4,6,8 kGy)on the preservation efficacy of fresh water chestnuts were investigated.The results showed that during the storage period of 40 d, the 2 kGy 60Co-γ -ray irradiation treatment group had a weight loss rate of 0.18% ,hardness of 3 810 g, relative conductivity of 17.2% ,and MDA content of 0.0020-0.002 6μmol/gFW. It could reduce SSC losses, lower the content of total phenolic,flavonoid,andquinone,inhibit bacterial growth,and effectively delay thedecline in water chestnut quality. Therefore,the 2 kGy 60Co-γ -ray irradiation treatment was identified as the optimal dose for postharvest preservation offresh water chestnuts inthe Guangxi,which might provide a theoretical basis for irradiation preservation of postharvest water chestnuts.
