Abstract:【Objective】To reveal the dynamic changes in amino acid content in grape seeds and provide theoretical support fortheir subsequent procesing andutilization.【Methods】Amino acidcontent andnutritional valuechanges inseeds Muscat Hamburg grapes from the grape germplasm repository at Northwest University in Yanglingwere investigatedfrom10 to 45daysafterfullbloom using HPLC-MS technology.Principal Component Analysis(PCA)was employed forcomparativeanalysis.【Results】Atotal15amino acids weredetected,with Gln,Lys,Asn,Glu,andAlabeing the mostabundant,while Ieand Pro were presentinlowerconcentrations.Most aminoacid contents fell within thetypicalrange for winegrapes.Compared totheFAO/WHOaminoacid prile,sixesential amino acids were identified,withLeubeing the firstlimitingaminoacid.Theaminoacidcompositioninmostdevelopmentalstagescloselymatchedtheideal prile,ndicating high nutritional value. 【Conclusion】Muscat Hamburg grape seds have potentialasaraw material for health products and as a resource for winemaking,fering new possibilities for the diversification health and wine products.
