Abstract:Polysaccharidesare abundantin natureandwidely present inanimals,plants,and microorganisms. Polysaccharides exhibitmultiplefunctionssuchastissesupportandprotection,energystorage,anti-iflammatoryefects, andimmunepromotion,andtheyarenow widelyrecognizedandaplied.Polysaccharide-basedgel materials,which typically featureathree-dimensionalnetwork structure,have been widelyappliedinfieldssuchas food,pharmaceuticals, chemical engineering,bioengineering,cosmetics,andsensors.due totheirunique structuresand properties.Compared with petroleum-basedgel materialssynthesized byconventional chemical synthesis,natural polysaccharide-based gelmaterials have the advantagesof widerawmaterial soures,lowcost,highcost-effctivenessafetyandnvironmentalfredliness, excellent biocompatibilty,simplepreparation,bodegradabilitytc.This paperreviews thproperties,preparationethods, specificapplications,aswellasadvantagesand disadvantagesof threecommonnaturalgelmaterials:sodiumalginate, celuloseandchitosan.Itaims toprovidemore theoreticalandpracticalreferenceforthefurther developmentand application of natural gel materials in various fields.
