Polyvinyl Alcohol Film Coating Treatment on Apple Storage Quality

Abstract:Polyvinylalcohol (PVA),a water-soluble polymer material,isanewtypeofsafe,environmentallyfriendlyand low-costfilmmaterialforpreservation.Thisstudyemploys thesolutionimmersioncoating method to investigate theeffects of PVAsolutions at diferent concentrations on apple storage quality.PVA solutions with mass concentrations of 0% (20 (control), 9% 0 12% ,and 18% are prepared.Apples are dipped in these solutions for 3O seconds,then taken out and stored at room temperature for 25days.This study evaluates theeffectsofPVAonfruit appearance,enzymeactivity and reactive oxygenspeciescontentofapplesduring storage.The experimentalresultsshow thatPVAtreatment aleviates the decline in fruitbrightnessandsolublesolidcontent,maintaining thegoodappearancequalityofapples.Onthe25thday,the fruit brightness and hardness of the 12% PVA treatment are 1.41 timesand 1.33 times those of the control,respectively;PVA treatment efectivelyregulates theactivitiesof peroxidaseand polyphenoloxidase,reduces thepeak activityofperoxidase, and thereby decreases the browning degree of apples. The superoxide dismutase activity of the 9% PVA treatment reaches its peak onthe15thday,andthecatalaseactivityonthe5thdayis1.18timesthatofthecontrol;PVAtreatment maintains the metabolic balanceofreactive oxygen speciesanddelays theaging process ofapples.Onthe5thday,thehydroxylradical content of the 12% PVA treatment is 16.26% less than that of the control,and on the 25th day, the H2O2 content is 22.17% lower thanthatofthecontrol.Inconclusion,PVAcoating treatmentcanformaprotectivefilmonthefruitsurface.Overal, PVA coating treatment forms a protective film on the fruit surface. Treatments with 9% and 12% PVA exhibit better preservation effects and play a positive role in the storage and preservation of apples.
