Composition analysis and comprehensive evaluation of amino acids in Fuding betel nut taro

Abstract:【Objective】Explore thecharacteristicsof amino acid composition inFuding betelnuttaroandits nutritional value,providing references forthe selectionofhigh-qualityvarietiesand thedevelopmentofresouces.【Method】Determine the amino acid contents inFuding betelnuttaro from 36 sampling points,evaluate the nutritional valueusingamino acid ratiocoefficient method,and performecorrelationanalysis and clusteranalysisonamino acidcontents.【ResultAtotalof 16 amino acids were detected in 36Fuding betel nut taro samples.The average total amino acid content was 20.23 mg/g. Among them,aspartic acid had the highest concentration ( 3.33mg/g ). The amino acid score (SRC) of Fuding betel nut tarowas54,withmethionineidentifiedasthefirstlimitingaminoacid.Withinthetotalaminoacidcontent,essentialamino acids acounted for 37.9%; medicinalamino acidand pediatriccompound amino acid injection accounted for61.9%and 44.7% ,respectively;flavor aminoacid,sweetaminoacid,biteramino acidand sour aminoacid acounted for50.6%,
38.0% , 36.0% ,and 33.5% ;aromaticaminoacidsaccountedfor 10.9% .Thecorrelationanalysisresultsindicated thatall aminoacidsexhibited highly significantcorrelations,exceptformethionine,glutamateandvaline.Thehierarchical clustering heatmap segregated the36 samples into two clusters,with the Dayangtou(Guanyang town)samples distinctly grouped alone,demonstrating both the highest aminoacid content and optimal quality parameters.【Conclusion】Fuding betel nuttaro contains acomplete profileof amino acids,with abundant medicinal amino acids and pediatric compound amino acid injection, demonstrating superior and unique nutritional value.
