Abstract: Using YunnanFengqing large leaf tea flowers as theraw materials and DPPH freeradical scavenging rate as the evaluation index,tea flowers were brewed according to diferent methods to studythe efectofdiferent brewing conditions on DPPH free radical scavenging ability of tea flowers.The optimal brewing conditions for tea flowers were obtained as follows: brewing time of 4 minutes, water temperature of 80∘C ,and solid-liquid ratio of 1:50 .Under these brewing conditions,the antioxidant activity of tea flowers reached its highest level.
