Investigation of selenium content in selenium-enriched apples in Shandong Province

Abstract: Objective to investigate the selenium content of selenium-enriched apples in Shandong Province, and to accumulate relevant data for reference of standard making, fruit production and consumers. 32 fruit samples were collected from main producing areas (including Yantai, Weihai and Dongying) . The selenium content in the samples was determined by Hydride Atomic fluorescence spectroscopy and compared with existing product standards. The average selenium content was 16.2μg/kg ,the highest was 28.5μg/kg, and 81.3% of the 32 samples were higher than 10μg/kg, the variation coefficient was 46.6% . It is difficult to enrich selenium in selenium-enriched apple, so it is necessary to standardize the production and label of selenium in order to correctly evaluate the way of selenium intake in residents.
