Abstract:Thefig fruit,branches,leaves,and other partscontain ficin.Ficincan efficientlyandspecifically accelerate biochemical reactions,has good thermal stabilityand has the functions of hydrolysis,coagulation, peroxidase-like,and decolorization,thus itis widely used in medical applications,food processing,inspection and testing,etc.However,there is stillno comprehensive and systematic review on its research and industrial application. This paper comprehensively introduced the basic structure and properties of ficin and its influencing factors,summarizedand evaluated its extraction methods,immobilization process,etc.,and elaborated itsapplication research in diferent industrial scenarios,pointing out the existing shortcomings and deficiencies,in order to accelerate the development and application of ficin industry.

无花果蛋白酶存在于无花果的果实、枝、叶等器官中,枝条中酶活性高达 202.962μg/g ,是生命活动中能高效、特异性地加快生物化学反应的生物催化剂,其稳定性好,具有水解、凝乳、过氧化物模拟酶、脱色等酶学性能,在医药、食品加工、检验检测等领域得到了广泛应用。(剩余13941字)
