Abstract:With therapiddevelopment oftechnology,artificial inteligence(AI) technology hasshown tremendousinfluence in multiple fields.In the field ofagriculture,especially in thepost harvest commercialization of fruits and vegetables,intelligent processing technology has gradually become a hot topic. The application of AI technology not only improves the effciencyof commercialization processing,but also significantly extends the shelf life of products and reduces losses.This article summarized the main application approaches of AI in the commercialization of post harvest fruits and vegetables in recent years,and explored thechallengesand future development trendsof artificial intelligence technology in the field of post harvest commercializationoffruitsand vegetables.It provided reference for the inteligent developmentof post harvest commercialization offruitsand vegetables,aswell as for the in-depth applicationofAI technology in the field of post harvest commercialization of fruits and vegetables in the future.
