Abstract： Electrostatic field sterilization technology issafeandeficient，andcauses neither physicaldamage norchemical residue，thus having broad application prospects.This paper gives anoverviewofthesimilarities and diferences among threedifferenttypesofelectricfields，distinguishesamongthemfromtheperspectiveofphysicalcharacteristics，andreviews existingknowledgeontheirprinciples.Meanwhile，itanalyzesthediferencesamongdifferentelectricfielddevicesandtheir influenceon thesterilization efect，andsummarizes their mainappicationscenarios in thesterilizationof meatand meat products.Finaly，tprovidesanoutlookonthefutureprospectsofthisfield，withtheimofprovidingtheoreticalsupportfor the wide application of electric field technology.
