Research Progress on the Application of Electric Field Sterilization Technology in the Meat Industry

Abstract: Electrostatic field sterilization technology issafeandeficient,andcauses neither physicaldamage norchemical residue,thus having broad application prospects.This paper gives anoverviewofthesimilarities and diferences among threedifferenttypesofelectricfields,distinguishesamongthemfromtheperspectiveofphysicalcharacteristics,andreviews existingknowledgeontheirprinciples.Meanwhile,itanalyzesthediferencesamongdifferentelectricfielddevicesandtheir influenceon thesterilization efect,andsummarizes their mainappicationscenarios in thesterilizationof meatand meat products.Finaly,tprovidesanoutlookonthefutureprospectsofthisfield,withtheimofprovidingtheoreticalsupportfor the wide application of electric field technology.
