果蔬类食品货架期的预测方法及研究进展

摘 要:果蔬类食品货架期是消费者了解果蔬品质的重要途径。果蔬变质过程较为复杂,是多种因素共同作用的结果。因此,本文介绍了与果蔬类食品品质相关的微生物指标、理化指标和感官指标,总结并分析了5种不同类型的货架期预测方法及其研究进展,展望了未来研究趋势,进一步保障食品安全和消费者健康。

Abstract: The shelf life of fruits and vegetables is an important way for consumers to assess their quality. The deterioration process of fruits and vegetables is complex, resulting from the interplay of various factors. Therefore, this paper introduced the microbiological indicators, physicochemical indicators and sensory indicators related to the quality of fruits and vegetables, summarized and analyzed 5 different types of shelflife prediction methods and their research progress, while also looking ahead to future research trends to further ensure food safety and consumer health.
