Abstract: Lipase is widely used in many fields such as the food industry. Measurement of lipase activity and immobilization technique of lipase are important means to improve utilization rate and catalytic efficiency. In this paper, the sources,activity measurement methods and immobilization techniques of lipase are introduced,with a particular focus on the new immobilization methods of lipase inrecent years.Finally,the application of lipase in the food field is emphasized,providing theoretical basis and ideas for future research.

淀粉酶、蛋白酶和脂肪酶是工业分支中最突出的酶,它们在工业应用中发挥着十分重要的作用,其中脂肪酶最为突出,因为它不仅具有良好的催化活性,而且对某些底物具有很高的专一性,脂肪酶可以催化许多不同的反应[,也可用于纸浆、动物饲料、制药、食品、废物处理和生物燃料等多种类型的工业中,寻找适合工业生产的脂肪酶较困难,大多数工业应用的脂肪酶[2]不需要完全的纯化,但是可以使脂肪酶得到更有效和成功的利用。(剩余17002字)
