罗平小黄姜姜油树脂的超声辅助提取工艺与风味特性研究

Abstract: With Zingiber offcinale Roscoe from Luoping,Yunnan as the research object,a new process for extracting ginger oleoresin using ultrasonic-solvent extraction is studied. Response surface method is used to optimize the extraction process, and solid-phase microextraction (SPME) and gas chromatography-mass spectrometry(GC-MS) are used to explore the aroma composition and key aroma components of ginger oleoresin obtained by this method. The results show that with petroleum ether as the solvent,the optimal extraction conditions for ginger oleoresin are solid-liquid ratio of 1:8 ,ultrasonic power of 160W ,ultrasonic time of 30min ,extraction temperature of 65∘C ,and extraction time of 5.8h , The concentration of 6-gingerol in the product obtained under these conditions is the highest of 106.77mg/g. :A total of 77 volatile components are identified in the product,among which,the relative content of compounds such as cubenene,cuparene and trans α -bisabolene is relatively high. Odor activity value (OAV)analysis shows that there are a total of 36 characteristic aroma components that contribute to the aroma of ginger oleoresin,and the alcohol compound such as eucalyptol contributes the most,with the OAV of 1.77×106 and eucalyptus camphor flavor;the following compounds are β -phellandrene with mint and turpentine flavors and myrcene with spicy flavor. The research results can provide new ideas for the extraction process of ginger oleoresin,and also provide references for the aroma characteristics,aroma formation mechanism,and product quality improvement of Luoping Zingiber officinale Roscoe ginger oleoresin, which is conducive to promoting local industrial development.
