Abstract: With the increasing prominence offood safety issues,effcient and precise food detection technologies have become key to safeguarding public health.Spectroscopy technology, with its rapid,non-destructive,and sensitive characteristics,has shown significant advantages in the fieldof food detection.This articlesystematically reviews the latest research progressof infrared spectroscopy, Raman spectroscopy,fluorescence spectroscopy,and multispectral fusion technology in food detection,analyzes the applications of various spectral technologies in detectig different food pollutants,quality grading,and authenticity verification,discusses the current challenges faced,ad explores future development directions,providing theoretical basis andtechnicalreferences to promote the deep application of spectroscopy technology in the field of food detection.
