Construction of a Food Safety Risk Early Warning Model for University Canteens Based on the HACCP System

Abstract: In recent years, food safety issues in university canteens have atracted significant atention,and traditional management methodsare difficult to meet the dynamic risk preventionand control needs.This article is based on Hazard Analysis and Critical Control Point (HACCP),combined with bigdata analysis and risk assessment methods,to construct a food safety risk early warning model for university canteens.This model quantifies and assesses keyrisk points suchasraw material procurement, processing,and microbialcontamination,setingdynamic early warmingthresholds toachievereal-time monitoring and early warning of risks.This paper elaboratesindetail on the modelconstruction process,keytechnologies,andimplementationsafeguards,highlightingthat the modelcan significantly enhance the accuracyofrisk identification andresponse timeliness,reduce the probabilityof food safety incidents,and play a crucial role in improving the overall standards of the industry.
