Quality Evaluation of Hand-made Wheat Vermicelli in Jiuquan

Abstract:This studyinvestigatedandanalyzed thecurrentqualitystatusofhand-made wheat vermicelin Jiuquan,iming to provideareferenceforlocalproductqualitycontrolandimprovement.Atotalof35sampleswereevaluatedfor9parameters,including sensoryqualityotentsofostre,ode,ulfuoidesidue,eadndaldedefoylate.Rsuls frombothquaityndeypspeties.Thefdingssowdlagevaratiosinostue,totalashndodeotetsage valuesof 78.3,68.4,and 39.1 g/kg,and coefficients of variation of 16.69 % , 20.40% ,and 20.97% ,respectively. Levels of exogenous contaminantssuchasleadandtotalarsenicwerebelowthequantificationlimitsofO.04mg/kgandO040mg/kg,respectively.No prohibitedorillgaladitivessuchassulfurdioxideorsodiumformaldehydesulfoxylateweredetected.Onlyonesamplehadan aluminum residue of 33.7mg/kg ,whileall otherswerebelow thequantification limitof25.Omg/kg.Insummary,Jiuquanhand-made wheatermiceliexbitedgoodsensorycharacteristics,lowlevelsofheavymetalcontainantssuchasleadandarsenic,andnial additives or bleaching agents were used during processing.
