Quality Evaluation of Hand-made Wheat Vermicelli in Jiuquan

Abstract：This studyinvestigatedandanalyzed thecurrentqualitystatusofhand-made wheat vermicelin Jiuquan，iming to provideareferenceforlocalproductqualitycontrolandimprovement.Atotalof35sampleswereevaluatedfor9parameters，including sensoryqualityotentsofostre，ode，ulfuoidesidue，eadndaldedefoylate.Rsuls frombothquaityndeypspeties.Thefdingssowdlagevaratiosinostue，totalashndodeotetsage valuesof 78.3，68.4，and 39.1 g/kg，and coefficients of variation of 16.69 % ， 20.40% ，and 20.97% ，respectively. Levels of exogenous contaminantssuchasleadandtotalarsenicwerebelowthequantificationlimitsofO.04mg/kgandO040mg/kg，respectively.No prohibitedorillgaladitivessuchassulfurdioxideorsodiumformaldehydesulfoxylateweredetected.Onlyonesamplehadan aluminum residue of 33.7mg/kg ，whileall otherswerebelow thequantification limitof25.Omg/kg.Insummary，Jiuquanhand-made wheatermiceliexbitedgoodsensorycharacteristics，lowlevelsofheavymetalcontainantssuchasleadandarsenic，andnial additives or bleaching agents were used during processing.
