富硒猴头菇中硒含量分布和赋存形态研究

摘要 研究了富硒猴头菇中硒的含量分布和赋存形态，结果表明，猴头菇中总硒含量为205.98 μg/g，其中有机硒含量占总硒的91.39%，而有机硒中最主要的赋存形态为蛋白硒，含量占有机硒的66.18%，其次是多糖硒和其他有机硒，占比分别为18.90%和14.30%，另有少量的核酸硒。

Study on Content Distribution and Combined Forms of Selenium in Selenium-enriched Heircium erinaceus

Abstract The content distribution and combined forms of selenium in selenium-enriched Hericium erinaceus were studied.The results showed that the content of total selenium in Hericium erinaceus was 205.98 μg/g，in which the content of organic selenium accounted for 91.39% of the total selenium.The main form of organic selenium was protein selenium，which accounted for organic selenium 66.18%; followed by polysaccharide selenium and other organic selenium，which accounted for organic selenium 18.90% and 14.30% respectively，and there was also a small amount of nucleic acid selenium.
