Abstract: Consumers’diversified demands for high-qualityandsafe meat products have presentedsubstantial challenges in chilled meat preservation.To enhance the qualityandsafetycontrolof chilled meatand addesstheissueof itsspoilage during processng,transportation,and storage,advanced preservation technologies suchasactive packaging and cold sterilization have been extensively researched and applied.Specificaly,active packaging maintains meat quality by incorporatingfunctionalcomponents intopackagingmaterials,whilecoldsterilization technologies includingpulsedelectric fields,cold plasma,andultraviolet iradiationeffectivelyreduce microbialcountstoextend productshelflife.Thisreview summarizes thecurrent development status and spoilage mechanism of chiled meat, with a focus on recent progresson activepackagingandcold sterilization technologies inthemeat preservationand futuredevelopment directions,aiming to provide theoretical guidance for innovative breakthroughs in chilld meat preservation technologies and their application.
